Leek and prawn soup
LEEKS AND PRAWNS SOUP RECIPE
- 2-3 leeks cut into slices of approximately one centimeter
- 8-12 peeled prawns
- 300 ml. coconut milk
- 300 ml. of homemade vegetable broth
- extra virgin olive oil
- a few thyme leaves (optional)
- sea salt
- freshly ground black pepper
Place a splash of olive oil in the bottom of a pan and sauté the leeks on medium low heat until they are very tender. Add the broth and coconut milk and let it heat over medium heat. Add salt and pepper at taste and then add the prawns. Turn to low heat and let cook for 20-30 minutes.
You can add a little vegetable broth to lighten the soup more.
