RED CABBAGE AND GRAPES SALAD
- 1 red cabbage, sliced
150 gr. of mixed green leaves (arugula, beet leaf, watercress … to taste)
150 gr. of sweet and seedless grapes
1 drizzle of extra virgin olive oil
Cover with extra virgin olive oil the bottom of a low saucepan or a pan. Put on low heat with the red cabbage and a handful of salt until it is tender. Remove from time to time so that the whole cabbage is cooked equally, will take about an hour. Once the cabbage is cooked, mix in a bowl with the grapes and green leaves. Toss and serve.
Serve it warm or cold, to taste.
