BONITO DEL NORTE AND GREEN PIPERRADA SANDWICH RECIPE
Ingredients for the green piperrada :
- 3 dozen of Gernika green peppers
- 1/2 onion
- 1/2 chive
- 80 ml extra virgin olive oil (approx.)
- sea salt (optional)
for the sandwiches
- quality preserve of bonito del norte
Peel the onion and onion and cut into thin slices (approximately half a centimeter). Prepare the peppers, removing the tail and seeds, and cut them into large pieces. Heat the olive oil in a skillet over medium-high heat (8 of 10) and add the onion and spring onion. Let them brown on both sides and remove to a plate with the help of a slotted spoon, draining the oil inside the pan.
Add the peppers to the pan with the hot oil. Raise the heat (9 out of 10) and let it be done for a few minutes, but without getting to soften completely; Remove from the fire when they are still green and when you bite a piece of pepper you will notice a little “al dente”. Remove the peppers from the plate with the onion, mixing and letting them warm. With the residual heat, they finish cooking. Put to the point of salt.
Fill the baguettes with the piperrada and the bonito to taste.
It is the ideal sandwich to take to the mountain or to the beach because it preserves very well.
